The Summer Fancy Food Show in New York City serves as a beacon for global food enthusiasts, offering a rich tapestry of culinary trends and products. The three-day event stands out even in a city famed for its dynamic food scene, gathering an impressive array of cuisines and innovations from around the world.

Among the thousands of exhibits, notable standouts included African honeys endorsed by Jane Goodall, spiced Indian sodas, and indulgent chocolates from Dubai. Protein-enriched foods were prominent, reflecting America’s evolving taste and dietary preferences.

The event dramatically illustrated cultural fusion, epitomized by moments like sampling Korean carbonara-flavored ramen before encountering an opera-singing chef serving traditional Italian carbonara topped with black truffles. Such vignettes epitomize the show’s role in highlighting culinary creativity.

This year’s show was the largest in almost a decade, with 2,500 companies, including 400 first-time exhibitors, spanning 340,000 square feet. Bill Lynch, president of the Specialty Food Organization, noted its significant growth since the previous year.

According to the 2025 Specialty Food Industry Outlook Report, the specialty food market—including gourmet chocolates, cheeses, snacks, and meats—is projected to grow by 5.5% this year. This growth is largely driven by the wellness trend, with products featuring reduced sugar and enhanced protein offerings taking center stage. Yet, economic uncertainty hovers, as 53% of U.S. consumers voice concerns about the economy.

Indian-influenced snacks captured significant attention. Jessie Kimsey of Misfits Market Inc. highlighted this trend amidst declining interest in traditional salty snacks. Exhibitors like Keya’s Snacks, with its Bombay Spice and Kala Namak chips, and Niranaya Foods’ grain-free naan pretzels, showcased this flavorful shift. Sach introduced a paneer-based pizza line with flavors like tikka masala, while Bollygood offered a new take on nimbu pani—an Indian sparkling lemonade—attracting a surprising fanbase for its lime-basil-cumin flavor.

The show also spotlighted unique beverage offerings. Narichan’s Kimchi Me, a drink based on white kimchi brine, and Emilio, a balsamic vinegar-filled aperitif from Terra del Tuono, illustrated the event’s diverse palate. These innovations reflect a broader trend toward adventurous, global tastes.

Indulgence in smaller formats, such as Unreal’s snacking chocolates, appears aligned with the current dietary zeitgeist, where GLP-1 treatments moderate but do not erase consumer desires. Companies are creatively addressing this with products like Baris’ frozen chocolate-dipped raspberries and protein-enriched items across product lines, including pasta and chocolate from Barilla and Rummo.

On the chocolate front, Dubai-inspired creations took center stage despite rising cacao prices, as did luxury chocolates with Asian influences. Companies like Kesshō and Marou blended local flavors with premium ingredients, offering bars infused with traditional tastes such as black sesame, hojicha, and Mekong kumquat.

Classic snacks like potato chips also found a spotlight. Companies like Folds and Beefy’s Own reimagined traditional favorites with innovative cooking methods and ingredients, presenting options like beef tallow chips reminiscent of fast-food fries from decades past.

Throughout, one topic loomed large: tariffs. During a panel discussion, industry leaders expressed concerns about their impact on product innovation and development. Factors such as package production in China complicate new ventures, according to Chitra Agrawal of Brooklyn Delhi and Ori Zohar of Burlap & Barrel.

René Bollier of Andre’s Confiserie Suisse encapsulated the mood of small businesses at the show. Despite apprehensions, the presence of numerous buyers brought optimism for continued growth in this vibrant market.
