How I developed this recipe-
Perfectly moist chocolate cake is my favourite but after i started following a dairy free diet I just couldn’t get a good enough chocolate cake as often as I wished. That’s when I came to have chocolate tortes -made without butter- which were denser cos most good tortes used almond flour.
I myself did try making the copies of the ones I found yummy but it’s only latter that I came to find an Indian pastry chef’s recipe which was light and chocolatey – exactly how I wanted it to be.
What’s special about this recipe-
Gluten-free, dairy free & nut free, if this specifications aren’t enough, I would like to also bring to your notice that this chocolatey goodness is high in egg protein and is oil free as well! Also, all that health benefits of dark chocolate which you already know about..
What you’ll need-
. 8 egg yolks
. 5 egg whites
. 2*75g sugar
. 85-90g of melted dark chocolate
. 2 g salt
How to make-
Make a meringue whipping up egg whites and 75g sugar in a bowl to form soft peaks.
In another bowl, whisk up salt, egg yolks and 75g sugar until it turns the palest yellow possible.
Melt the chocolate using a double boiler/ in microwave oven and gently fold in cooled, melted chocolate into the yolk mix.
Then gently fold in the meringue into the above mix.
Bake it at 170 degree Celsius preheated oven for around 25 minutes in a greased, bottom lined, round tin or foil lined round ring.
Let it cool for 10 mins in the pan before removing from it onto a tray or flat surface.
Cool it completely before slicing.
Dust it with powdered sugar/cocoa powder . Slice and serve after garnishing.
Notes, tips and suggestions-
- -Serve your slice of torte with chopped nuts (almonds, pecans, praline peanuts,etc.) or berries (strawberries, raspberries,etc.)- for a nut free version.
- -You could also use diet specific chocolate ganache/sauces to drizzle on top of it and serve it with a scoop of your favourite ice cream.
